Leftover wine? Use it to spice up your kale. Sautéing kale in wine with a few peppers adds tons of flavor. In this recipe, used up leftover pumpkin cranberry wine. A friend who does not drink asked for alternatives; please use apple juice, it will also do wonders for your kale. Please note alcohol burns off when you cook it, however, anyone who chooses not to use alcohol will enjoy this recipe by substituting apple juice.
Kicked Up Kale
1T avocado oil
1 yellow pepper, diced
1 bunch kale, stem removed, diced
1/2c wine (or apple juice)
1/2t salt
In large saucepan with lid, heat 1T avocado oil on medium high then add 1 yellow pepper, diced. Sauté for 5-8 minutes, until pepper starts to brown. Add 1 bunch kale, 1t salt, and 1/2c wine (or apple juice) then cover. Simmer 5-8 minutes, stirring occasionally.
